That sounds like a great way to approach things - visiting a variety of different habitats in each season of the year. It should certainly give your grandson the chance to see a good number of species.
Whilst I can't give you (at least off the top of my head) a list of sites to visit, some of the Bolton birders should be able to help, I can provide you with some information on the national Bird Atlas and GM Breeding Atlas 2008-11. There is a separate section on this forum for the GM Atlas which is worth having a look at.
If you would like to drop me a pm with your email address, I can send you some info on how the records you and your grandson collect can be used for both Atlases. Also have a look at the Bird Atlas and Bird Surveys section on Manchester Birding and the section on Bird Recording and County Rarities.
Best of luck
Steve
